Ristorante Borgo Konishi to unveil composer Conisch’s new work “SHINROKU (Divine Deer)” during Italian Week 100
— A resonance of music and cuisine where Nara meets Italy —
From Saturday, November 1, 2025, Ristorante Borgo Konishi in Nara will begin presenting a newly commissioned musical suite by composer Conisch titled “SHINROKU (Divine Deer)”. Created for the restaurant’s participation in Italian Week 100, this work bridges the ancient cultural heritage of Nara with Italian vitality through a unique sound- and food-based experience.

“SHINROKU (Divine Deer)” — A 60-minute journey where taste and sound converge
Comprising nine movements and lasting approximately 60 minutes, SHINROKU corresponds to each dish of the special course served at Borgo Konishi. Traditional Japanese instruments such as shō, koto and shakuhachi are woven together with Western instruments like the mandolin and bandoneon, creating a sonic fusion of Nara’s tranquillity and Italy’s vibrant spirit.
The title “SHINROKU” takes inspiration from the deer of Nara, and the word “Musica” (music) contains the sound “Sica” (deer) in its phonetic structure — representing the thread of “music,” “deer,” and “connection (enishi).” The composition connects people and nature, East and West, and past and future.

A meeting of Chef Masaki Yamazaki and Composer Conisch
This project was born from the encounter between Chef Masaki Yamazaki of Borgo Konishi and composer Conisch. Both share the belief that cuisine and music are not simply to be consumed or heard, but to be felt and reflected upon. The restaurant space, the menu, and the soundscape are designed together to form a single holistic artwork.
The music is not merely background—it is tuned to the aromas, textures and afterglow of each course and to the atmosphere of Nara itself. With each serving, the sound transforms, guiding guests through a sensory journey in which “eating” becomes storytelling.

By giving equal importance to cuisine and music and treating the entire space as an immersive artwork, this initiative presents a new template for the restaurant experience.
Enjoying a meal becomes more than eating—it becomes a time of travelling within your senses.
In ancient Nara, where Japan and Italy, food and sound, chef and composer resonate together—this unique moment can only be experienced once.
About Italian Week 100
Italian Week 100 is a major restaurant event featuring 100 Italian restaurants from across Japan. The 2025 theme is “Pasta Identity.” Participating restaurants each present distinctive signature dishes, contributing to the elevation of Italy’s culinary culture in Japan.

Masaki Yamazaki
Masaki Yamazaki began his culinary career after a part-time job as a student sparked his passion for cooking.
He trained for 11 years at Piatto, a pasta-specialty restaurant in Nara City, before opening his own restaurant, Beccan Piatto, in June 2007 as owner-chef.
In 2014, he rebranded the restaurant as Ristorante Borgo KONISHI, which continues to this day.
Certified by the Italian Chamber of Commerce in Japan (ICCJ) under the Adesivo di Qualità Italiana (AQI) program
3rd place nationally in the Premio Acci 2019 Italian Cuisine Contest

Moving freely between composition, performance, conducting, writing and design, he pursues universal beauty born at the intersection of art and science.
His music spans television and film scores—including for Pokémon, NHK and TBS programs—through to concert works, wind ensembles, concertos, and art installations.
With a distinct philosophy and sensibility, Conisch continues to create music that resonates beyond genres, eras, and borders.
